Ingredients

  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 2 small Shallots, finely chopped
  • 2 cloves Garlic cloves, minced
  • 8 ounces Cremini or button mushrooms, sliced
  • 0.25 cup Dry white wine (optional)
  • 1 cup Heavy cream
  • 0.5 cup Chicken or vegetable stock
  • 0.5 teaspoons Fresh thyme leaves (optional)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper, freshly ground
  • 0.25 cup Grated Parmesan cheese (optional)
  • 1 tablespoon Fresh parsley, chopped (for garnish)

Directions

Step 1

In a large skillet, heat the unsalted butter and olive oil over medium heat until the butter is melted and begins to bubble slightly.

Step 2

Add the finely chopped shallots to the skillet and sauté for 2-3 minutes until they become translucent.

Step 3

Stir in the minced garlic and cook for another 30 seconds, being careful not to let it burn.

Step 4

Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they release their moisture and begin to brown.

Step 5

If using, pour the dry white wine into the skillet, deglazing the pan by scraping up any browned bits from the bottom. Let the wine simmer for 2-3 minutes until it reduces slightly.

Step 6

Lower the heat to medium-low and pour in the heavy cream and chicken or vegetable stock. Stir to combine and bring the mixture to a gentle simmer.

Step 7

Add the fresh thyme leaves (if using), salt, and black pepper. Let the sauce simmer for 5-7 minutes, stirring occasionally, until it thickens to your desired consistency.

Step 8

For an extra touch of richness, stir in the grated Parmesan cheese and allow it to melt into the sauce.

Step 9

Taste and adjust the seasoning with more salt or pepper if necessary.

Step 10

Remove the skillet from heat and sprinkle the finished sauce with freshly chopped parsley for garnish.

Step 11

Serve the mushroom cream sauce warm over your choice of pasta, steak, chicken, or vegetables. Enjoy!
