Ingredients

  • 1 piece (about 8 oz) Boneless, skinless chicken breast
  • 1 cup (chopped) Button mushrooms
  • 2 cloves (minced) Garlic
  • 2 tablespoons Olive oil
  • 4 ounces (softened) Cream cheese
  • 1 cup (grated) Parmesan cheese
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons (chopped, plus extra for garnish) Fresh parsley
  • 24 pieces Wonton wrappers
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Spray a 24-cup mini muffin tin lightly with cooking spray.

Step 3

Press one wonton wrapper into each muffin tin cup, pressing down gently to form a cup shape. Set aside.

Step 4

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breast and cook for 4-5 minutes per side or until fully cooked through. Remove from the skillet and let rest for 5 minutes before dicing into small pieces.

Step 5

In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped mushrooms and minced garlic for 3-4 minutes or until softened and fragrant.
