Ingredients

  • 1 lb (homemade or store-bought) pizza dough
  • 2 tbsp olive oil
  • 2 medium, thinly sliced yellow onion
  • 8 oz, chopped cremini mushrooms
  • 2 minced garlic cloves
  • 0.5 tsp dried thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp (for dusting) all-purpose flour
  • 1 beaten (for egg wash) egg
  • 1 tbsp (for egg wash) water

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for 15-20 minutes, or until deeply caramelized. Remove from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Add the chopped mushrooms and cook for 5-7 minutes, or until softened and golden. Stir in the minced garlic, dried thyme, salt, and black pepper. Cook for an additional 1 minute, then remove from heat.
