Ingredients

  • 200 grams Button mushrooms
  • 1 large Red bell pepper
  • 100 grams Mixed salad greens
  • 2 tablespoons Fresh chives
  • 3 tablespoons Olive oil
  • 2 tablespoons White wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Wash and pat dry the red bell pepper. Place it on a baking sheet and roast in the preheated oven for about 10 minutes, turning it halfway, until the skin is slightly charred and softened.

While the pepper is roasting, clean the button mushrooms using a damp paper towel and slice them thinly. Set aside.

Once the red bell pepper has finished roasting, remove it from the oven and let it cool for 5 minutes. Peel off the skin, remove the stem and seeds, and slice the flesh into thin strips.
