Ingredients

  • 2 sheets Puff pastry sheets
  • 250 grams Button mushrooms
  • 2 medium Shallots
  • 2 cloves Garlic cloves
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Fresh thyme
  • 100 grams Cream cheese
  • 1 large Egg
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Clean the button mushrooms with a damp paper towel and finely chop them.

Step 3

Finely chop the shallots and garlic.

Step 4

Heat a large pan over medium heat and add olive oil. Once warm, sauté the shallots and garlic until fragrant and softened, about 3 minutes.

Step 5

Add the chopped mushrooms to the pan and sauté until they release their moisture and it mostly evaporates, about 6-8 minutes.

Step 6

Stir in the chopped parsley, thyme, salt, and black pepper. Remove from heat and let the mixture cool slightly.

Once cooled, mix the mushroom mixture with the cream cheese in a bowl until well combined.

Lightly flour a clean surface and roll out the puff pastry sheets. Cut each sheet into 6 equal rectangles.

Place a spoonful of the mushroom filling along one edge of each rectangle, then roll the pastry over the filling, sealing the edges by pressing gently.

In a small bowl, beat the egg with a splash of water to create an egg wash. Brush the surface of each roll with the egg wash.

Arrange the rolls seam-side down on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until the rolls are golden and puffed.
