Ingredients

  • 300 grams spaghetti
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 units garlic cloves, minced
  • 1 teaspoon red chili flakes (optional)
  • 50 grams Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 2 units eggs
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 300 grams leftover cooked spaghetti (optional, instead of boiling new spaghetti)

Directions

Step 1

If you are starting with uncooked spaghetti, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

Step 2

Heat a large skillet over medium heat. Add the olive oil and butter, allowing the butter to melt completely.

Step 3

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant. If using red chili flakes, stir them in now for additional heat.

Step 4

In a small bowl, whisk the two eggs with a pinch of salt and black pepper. Set aside.

Step 5

Add the cooked spaghetti to the skillet, tossing to coat it evenly with the garlic butter and spreading it into an even layer.

Step 6

Cook undisturbed for about 3-5 minutes, allowing the bottom layer of spaghetti to crisp and turn golden-brown.

Step 7

Flip the spaghetti, or stir gently if flipping is difficult, and cook the other side for an additional 3-4 minutes.

Step 8

Pour the whisked eggs over the spaghetti and toss quickly to coat the strands evenly, scrambling the eggs slightly as they cook.

Step 9

Sprinkle the grated Parmesan cheese over the spaghetti and toss gently to melt the cheese into the mixture.

Step 10

Remove from heat and garnish with freshly chopped parsley. Adjust seasoning with additional salt and pepper, if needed.

Step 11

Serve immediately as a main dish or alongside a fresh green salad. Enjoy!
