Ingredients

  • 1 medium head Green cabbage
  • 1 large Onion
  • 2 medium Tomato
  • 1 inch piece Ginger
  • 4 Garlic cloves
  • 2 Green chilies
  • 10 leaves Curry leaves
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1.5 teaspoons Coriander powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 tablespoons Cooking oil
  • 2 tablespoons Fresh cilantro leaves
  • 0.25 cup Water

Directions

Step 1

Finely shred the cabbage. Dice the onion and tomatoes. Mince the ginger and garlic, and slit the green chilies lengthwise.

Step 2

Heat the oil in a large skillet or wok over medium heat. Add the mustard seeds and cumin seeds. Let them splutter for 30 seconds.

Step 3

Add the curry leaves, ginger, garlic, and green chilies. Sauté for 1-2 minutes until fragrant.

Add the diced onion and sauté until golden brown, around 5-6 minutes.

Stir in the tomatoes and cook until they soften, about 4-5 minutes.

Sprinkle in the turmeric powder, red chili powder, coriander powder, and salt. Mix well to combine the spices with the onion-tomato mixture.
