Ingredients

  • 250 g all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 60 g cold unsalted butter
  • 1 tbsp granulated sugar
  • 150 ml milk
  • 1 egg (optional, for egg wash)

Directions

Step 1

Preheat your oven to 220°C (200°C fan) or 425°F. Line a baking sheet with parchment paper and set aside.

Step 2

In a large mixing bowl, sift together the all-purpose flour, baking powder, and salt.

Step 3

Add the cold unsalted butter to the dry ingredients. Rub the butter into the flour mixture using your fingertips until it resembles fine breadcrumbs.

Step 4

Stir in the granulated sugar next, distributing it evenly throughout the mixture.

Step 5

Make a well in the center of the dry ingredients and pour in the milk. Use a butter knife or a fork to gently stir everything together until a soft dough forms. Be careful not to overmix.

Step 6

Lightly flour a clean surface and turn the dough out onto it. Knead the dough very gently and briefly, just enough to bring it together.

Step 7

Pat the dough out to a thickness of approximately 2 cm (3/4 inch). Use a round cookie cutter (about 5 cm in diameter) to cut out scones. Gather any scraps of dough, reshape, and repeat until all the dough is used.

Step 8

Place the scones onto the prepared baking sheet, leaving a little space between each one. If desired, beat the optional egg and brush the tops of the scones for a golden finish.

Step 9

Bake in the preheated oven for 10–12 minutes or until the scones are lightly golden on top and have risen well.

Step 10

Remove the scones from the oven and let them cool slightly on a wire rack. Serve warm with butter, jam, or cream. Enjoy!
