Ingredients

  • 225 grams Unsalted butter (softened)
  • 225 grams Caster sugar
  • 4 large Eggs
  • 225 grams Self-raising flour
  • 1 teaspoon Baking powder
  • 2 Lemons (zested and juiced)
  • 2 tablespoons Milk
  • 100 grams Granulated sugar

Directions

Step 1

Preheat your oven to 180°C (160°C fan) or 350°F. Grease and line a 9-inch (23cm) loaf tin with parchment paper.

Step 2

In a large mixing bowl, add the softened butter, caster sugar, eggs, self-raising flour, baking powder, lemon zest, and milk.

Step 3

Using an electric hand mixer or a whisk, beat all the ingredients together until smooth and fluffy. This should take about 2-3 minutes.

Step 4

Pour the batter into the prepared loaf tin, spreading it out evenly with a spatula.
