Ingredients

  • 1 cup white rice
  • 2 cups water
  • 3 cups whole milk
  • 1 cup heavy cream
  • 0.75 cup granulated sugar
  • 3 egg yolks
  • 1.5 teaspoons vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.75 cup raisins
  • 1 tablespoon butter

Directions

Step 1

In a medium-sized saucepan, bring the water to a boil. Add the rice, reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed.

Step 2

While the rice is cooking, in a separate large saucepan, combine the milk, heavy cream, and granulated sugar. Heat the mixture over medium heat, stirring frequently, until it begins to steam but does not boil.

Step 3

In a small bowl, beat the egg yolks and temper them by slowly whisking in about 1/4 cup of the hot milk mixture. Gradually add the tempered yolks back into the saucepan while whisking continuously.

Step 4

Add the cooked rice to the milk mixture and stir well. Reduce the heat to low and let simmer for 10-15 minutes, stirring occasionally, until the mixture thickens to your desired consistency.

Step 5

Stir in the vanilla extract, ground cinnamon, raisins, and butter. Mix until well incorporated and the butter is melted.

Step 6

Remove the pudding from the heat and let it cool slightly before serving. Serve warm or chilled, garnished with a sprinkle of cinnamon if desired.
