Ingredients

  • 500 grams beef stew meat or chicken thighs
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 2 medium celery stalks, chopped
  • 3 medium potatoes, peeled and cubed
  • 3 small garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 500 milliliters beef or chicken stock
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 100 grams frozen peas
  • 1 piece bay leaf

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

Heat olive oil and butter in a large, oven-safe pot or Dutch oven over medium heat.

Step 3

If using beef, season the stew meat with salt and pepper, then sear it on all sides until brown. If using chicken, season the thighs similarly and brown them briefly. Remove the meat and set aside.

Step 4

In the same pot, add the diced onion and cook for 3-4 minutes until softened.

Step 5

Add the minced garlic, sliced carrots, and chopped celery, and sauté for another 2-3 minutes.

Step 6

Sprinkle the flour over the vegetables and stir well to coat. Cook for 1 minute to remove the raw flavor of the flour.

Step 7

Gradually pour in the stock while stirring to prevent lumps. Add the tomato paste, thyme, rosemary, and bay leaf, and mix well.

Step 8

Return the seared beef or chicken to the pot, followed by the cubed potatoes. Stir to combine.

Step 9

Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.

Step 10

Bake in the oven for 75 minutes or until the beef or chicken is tender. Stir the casserole once or twice during cooking to ensure even heat distribution.

Step 11

Remove the pot from the oven, stir in the frozen peas, and let the casserole rest for 5 minutes before serving.

Step 12

Serve hot with crusty bread or a side salad for a complete meal.
