Ingredients

  • 1.25 cups Warm water (110°F/45°C)
  • 3 tablespoons Honey
  • 2.25 teaspoons Active dry yeast
  • 2 cups Whole wheat flour
  • 1 cup All-purpose flour
  • 0.5 cup Large flake oats
  • 0.25 cup Sunflower seeds
  • 3 tablespoons Flaxseeds
  • 1 teaspoon Salt
  • 2 tablespoons Canola oil
  • 0.5 cup Additional all-purpose flour (for kneading)

Directions

Step 1

In a large bowl, combine warm water and honey. Stir until the honey dissolves, then sprinkle the yeast over the mixture. Let it stand for about 10 minutes, or until frothy.

Step 2

In a separate large bowl, whisk together the whole wheat flour, 1 cup of all-purpose flour, oats, sunflower seeds, flaxseeds, and salt.

Step 3

Pour the yeast mixture and canola oil into the dry ingredients. Stir until a sticky dough forms.

Step 4

Turn the dough out onto a lightly floured surface. Gradually add the additional all-purpose flour as needed and knead the dough for about 8–10 minutes, or until it is smooth and elastic.

Place the dough in a lightly oiled bowl. Cover with a clean kitchen towel and let it rise in a warm, draft-free area for about 1 to 1.5 hours, or until doubled in size.

Step 6

Cover again with a kitchen towel and let it rise for another 30–40 minutes, or until the dough has risen about 1 inch above the pan.

Preheat the oven to 375°F (190°C). Bake the loaf in the center of the oven for 30–35 minutes, or until the top is golden brown and the loaf sounds hollow when tapped on the bottom.

Step 9

Turn the loaf out onto a wire rack and let it cool completely before slicing. Serve as desired.
