Ingredients

  • 60 grams Rice flour
  • 100 grams Granulated sugar
  • 1 liter Whole milk
  • 2 tablespoons Rose water
  • 125 milliliters Water
  • 1 teaspoon Ground cinnamon
  • 2 tablespoons Chopped pistachios (optional)

Directions

Step 1

In a medium-sized bowl, mix the rice flour and 125ml of water until it forms a smooth and lump-free slurry. Set aside.

Step 2

In a large saucepan, combine milk and granulated sugar. Heat the mixture over medium heat, stirring frequently to ensure the sugar dissolves completely, but do not let the milk boil.

Step 3

Once the milk is warm, gradually pour the rice flour slurry into the saucepan while continuously stirring to prevent lumps from forming.

Step 4

Continue to cook over medium heat, stirring constantly, until the mixture thickens and reaches a creamy, pudding-like consistency. This should take about 10-12 minutes.

Step 5

Remove the saucepan from heat and stir in the rose water for a fragrant finish.

Step 6

Pour the pudding into serving dishes or bowls while still warm. Let it cool to room temperature, then refrigerate for at least 2 hours to set fully.

Step 7

Before serving, sprinkle ground cinnamon evenly over the top of the pudding. Optionally, garnish with chopped pistachios for added crunch and flavor.
