  • 16 ounces, sliced button mushrooms
  • 8 ounces, sliced cremini mushrooms
  • 1 cup dry white wine
  • 4 cups vegetable stock
  • 1 cup heavy cream
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon (adjust to taste) kosher salt
  • 0.5 teaspoons (freshly ground, adjust to taste) black pepper
  • 0.25 cup, grated (optional for garnish) parmesan cheese
  • 2 tablespoons (for garnish, optional) chopped parsley

Directions

Step 1

Heat the olive oil and butter in a large pot over medium heat until melted and shimmering.

Step 2

Add the diced onion, carrot, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Stir in the minced garlic and cook for an additional minute until fragrant.

Add the sliced button and cremini mushrooms to the pot. Cook for 8-10 minutes, stirring occasionally, until the mushrooms release their moisture and start to brown.
