Ingredients

  • 500 grams Fresh strawberries
  • 50 grams Granulated sugar
  • 300 grams Sponge cake
  • 500 ml Vanilla custard
  • 250 ml Whipping cream
  • 20 grams Powdered sugar
  • 1 tsp Vanilla extract
  • 50 ml Sherry (optional)
  • 20 grams Chopped almonds (optional, for garnish)
  • 5 leaves Fresh mint leaves (optional, for garnish)

Directions

Step 1

Wash the fresh strawberries, remove the green tops, and slice them into thin pieces. Reserve a few whole strawberries for garnish if desired.

Step 2

Sprinkle the sliced strawberries with granulated sugar, toss gently, and set aside for 10 minutes to macerate and release their juices.

Step 3

Cut the sponge cake into small cubes, about 1-inch in size. If using sherry, drizzle it lightly over the sponge cubes for a boozy flavor kick.

Step 4

In a separate bowl, whip the cream with powdered sugar and vanilla extract until soft peaks form. Be careful not to overwhip.

Step 5

To assemble the trifle, begin by layering a third of the sponge cake cubes in the bottom of a large glass bowl or individual serving glasses.

Step 6

Next, add a layer of the macerated strawberries with some of their juices, followed by a layer of vanilla custard.

Step 7

Spread a layer of whipped cream on top of the custard. Repeat the layering process (sponge cake, strawberries, custard, whipped cream) until all ingredients are used, finishing with a generous layer of whipped cream on top.

Step 8

Garnish the trifle with the reserved whole strawberries, chopped almonds, and fresh mint leaves as desired.

Step 9

Chill the trifle in the refrigerator for at least 2 hours to allow the flavors to meld together. Serve cold and enjoy!
