Ingredients

  • 6 pieces Large eggs
  • 4 cups Water
  • 2 tablespoons Black tea leaves (or black tea bags)
  • 0.5 cup Soy sauce
  • 1 teaspoon Chinese five-spice powder
  • 2 pods Star anise
  • 1 stick Cinnamon stick
  • 2 teaspoons Sugar
  • 1 teaspoon Salt

Directions

Step 1

Place the eggs in a medium-sized pot and add enough water to cover the eggs by 1 inch.

Step 2

Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to medium and let the eggs cook for 7 minutes for semi-soft yolks, or 10 minutes for fully hard-boiled yolks.

Step 3

Remove the eggs from the pot and transfer them to a bowl of cold water. Let them cool for 5 minutes.

Step 4

Once the eggs are cool enough to handle, use the back of a spoon to gently crack the eggshells all over, keeping the shells intact. This will allow the tea and soy sauce mixture to infuse into the eggs.

In a clean pot, combine 4 cups of water, tea leaves, soy sauce, Chinese five-spice powder, star anise, cinnamon stick, sugar, and salt. Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.

Add the cracked eggs into the pot with the tea mixture. Make sure the eggs are fully submerged (add more water if necessary). Cover the pot and simmer on low heat for 40 minutes.
