Ingredients

  • 1 piece Unbaked 9-inch pie crust
  • 1.5 cups Pecans, roughly chopped
  • 3 pieces Large eggs (for filling)
  • 1 cup Dark corn syrup
  • 0.5 cup Granulated sugar
  • 4 tablespoons Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 3 pieces Large egg whites (for meringue)
  • 6 tablespoons Granulated sugar (for meringue)
  • 0.125 teaspoon Cream of tartar

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Place the unbaked 9-inch pie crust into a pie dish and set aside.

Step 3

In a large mixing bowl, whisk together the eggs, dark corn syrup, sugar, melted butter, and vanilla extract until smooth.

Step 4

Stir in the chopped pecans until evenly distributed.

Step 5

Pour the filling mixture into the prepared pie crust, ensuring the pecans are evenly spread out.

Step 6

Place the pie on the middle rack of the oven and bake for 40-45 minutes, or until the filling is set but slightly jiggles in the center. Remove the pie from the oven and allow it to cool for at least 15 minutes.

Step 7

While the pie is cooling, prepare the meringue. In a clean mixing bowl, beat the egg whites with an electric mixer on medium speed until they become foamy.

Step 8

Add the cream of tartar to the egg whites and gradually increase the mixer speed to high.

Step 9

Slowly add the sugar, one tablespoon at a time, while beating the egg whites until they form stiff, glossy peaks.

Step 10

Spread the meringue evenly over the cooled pie, making sure it touches the edges of the crust to seal.

Step 11

Use the back of a spoon to create decorative peaks in the meringue, if desired.

Step 12

Place the pie back into the oven and bake for an additional 8-10 minutes, or until the peaks of the meringue are lightly browned.

Step 13

Remove the pie from the oven and cool completely on a wire rack before slicing and serving.
