Ingredients

  • 1 piece Pre-made or homemade pie crust
  • 2 cups Granulated sugar
  • 0.25 cups Unsalted butter
  • 2 large Lemons (zested and juiced)
  • 4 large Eggs
  • 0.25 cups Whole milk
  • 1 tablespoon Cornmeal
  • 1 tablespoon All-purpose flour
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoons Salt

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Roll out your pre-made or homemade pie crust and fit it into a 9-inch pie pan. Trim and crimp the edges as desired. Place the pie crust in the refrigerator to chill while you prepare the filling.

Step 3

In a large mixing bowl, cream together the granulated sugar and unsalted butter using a hand mixer or stand mixer until the mixture is light and fluffy.

Step 4

Add the lemon zest, freshly squeezed lemon juice, and eggs to the bowl. Beat until the mixture is well combined.

Step 5

Stir in the milk, cornmeal, flour, vanilla extract, and salt. Mix until the filling is smooth and velvety.

Step 6

Remove the chilled pie crust from the refrigerator. Pour the prepared filling into the crust, spreading it evenly.

Step 7

Carefully transfer the pie to the preheated oven and bake for 45–50 minutes, or until the filling is set and the top is a golden brown. A slight jiggle in the center is fine, as it will firm up as it cools.

Step 8

Once baked, let the pie cool completely to room temperature on a wire rack. This allows the filling to set fully.

Step 9

For the best flavor, chill the pie in the refrigerator for 1–2 hours before serving. Slice and enjoy!
