Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1 tablespoon Salt
  • 4 large Eggs
  • 1 cup Celery
  • 0.5 medium Red onion
  • 0.5 cup Dill pickles
  • 1 cup Mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon White vinegar
  • 1 teaspoon Sugar
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel and cube the Yukon Gold potatoes into bite-sized pieces. Place them in a large pot and cover with cold water. Add the tablespoon of salt.

Step 2

Bring the pot to a boil over medium-high heat, then reduce the heat to simmer. Cook the potatoes for 10-15 minutes, or until they are tender but not mushy. Drain and let them cool slightly.

Step 3

While the potatoes are boiling, place the eggs in a smaller pot and cover with water. Bring to a boil, then reduce to low heat and simmer for 10 minutes. Remove the eggs and place them in an ice bath to cool. Once cooled, peel and chop them roughly.
