Ingredients

  • 1 pound ground beef
  • 1 large onion, diced
  • 1 medium bell pepper, diced
  • 3 cloves garlic, minced
  • 15 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 2 cups beef broth
  • 2 cups elbow macaroni
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon sugar
  • 1 tablespoon olive oil
  • 1 cup cheddar cheese, shredded (optional for garnish)
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat if necessary.

Step 3

Add the diced onion, bell pepper, and minced garlic to the pot. Sauté for 5 minutes, or until the vegetables are softened.

Step 4

Stir in the canned diced tomatoes, tomato sauce, beef broth, paprika, Italian seasoning, salt, black pepper, and sugar. Mix well to combine.

Step 5

Bring the mixture to a simmer, then add the elbow macaroni to the pot.

Step 6

Stir, cover with a lid, and allow the goulash to cook for about 15 minutes over medium-low heat, stirring occasionally, until the macaroni is tender.

Step 7

Taste and adjust seasoning with additional salt or pepper if needed.

Step 8

Serve the goulash hot, optionally garnished with shredded cheddar cheese and chopped parsley.
