  • 8 cups water
  • 1 whole ham hock (or diced smoked ham)
  • 1 large onion, chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Rinse the split peas under cold water and remove any debris or discolored peas. Set aside.

In a large stockpot or Dutch oven, heat the olive oil over medium heat.

Add the chopped onion, carrots, and celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened and starting to brown.

Add the minced garlic and cook for an additional 1-2 minutes, stirring constantly to prevent burning.
