Ingredients

  • 2 sheets puff pastry sheets
  • 300 g white fish fillets (cod or tilapia)
  • 100 g cream cheese
  • 100 g spinach leaves (fresh, chopped)
  • 2 cloves garlic (minced)
  • 1 tsp lemon zest
  • 1 tbsp dill (fresh, chopped)
  • 1 large egg (beaten, for egg wash)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

Step 3

Add the chopped spinach to the skillet and sauté for 2-3 minutes until wilted. Remove from heat and set aside.

Step 4

In a bowl, mix the cream cheese, lemon zest, chopped dill, salt, and black pepper until well combined.

Step 5

Gently fold in the cooked spinach and shredded fish fillets into the cream cheese mixture.

Step 6

On a lightly floured surface, roll out one puff pastry sheet. Using a knife, cut out fish shapes (or rectangles, if preferred). Repeat with the second sheet so you have pairs of shapes.

Step 7

Spoon the fish filling onto one half of each pair of pastry shapes, leaving a border around the edges.

Step 8

Brush the edges of the pastry with beaten egg, then place the corresponding pastry shape on top and press the edges together to seal. Use a fork to crimp the edges for extra security and decoration.

Step 9

Place the pastry fish onto the prepared baking sheet. Brush the tops with the remaining beaten egg.

Step 10

Bake in the preheated oven for 25-30 minutes, or until the pastries are golden brown and puffed.

Step 11

Let cool for 5 minutes before serving. Serve warm with a side of fresh salad or steamed vegetables.
