Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 0.5 cups All-purpose flour
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 1 cups Chicken broth
  • 0.75 cups Heavy cream
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Dried thyme
  • 4 slices Provolone or Swiss cheese slices
  • 0.5 cups Panko breadcrumbs
  • 2 tablespoons Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

Step 2

Season the chicken breasts on both sides with salt, black pepper, and garlic powder.

Step 3

Place the flour in a shallow dish and dredge each chicken breast, shaking off any excess flour.

Step 4

Heat 2 tablespoons of butter and the olive oil over medium heat in a large skillet. Sear the chicken breasts for 2-3 minutes per side until golden brown. Remove the chicken and place in the prepared baking dish.

Step 5

In the same skillet over medium heat, melt the remaining 2 tablespoons of butter and whisk in the chicken broth, heavy cream, Dijon mustard, and dried thyme. Cook for 2-3 minutes, stirring frequently, until the sauce thickens slightly.

Step 6

Pour the sauce evenly over the chicken breasts in the baking dish.

Step 7

Lay one slice of cheese over each chicken breast.

Step 8

In a small bowl, combine the panko breadcrumbs and grated Parmesan cheese. Sprinkle the breadcrumb mixture evenly over the cheese-covered chicken.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C) and the topping is golden brown.

Step 10

Remove from the oven and let rest for 5 minutes. Garnish with chopped fresh parsley, if desired, before serving.
