Ingredients

  • 1 cup Unsalted butter (softened)
  • 0.5 cup Granulated sugar (for crust)
  • 2 cups All-purpose flour (for crust)
  • 1.5 cups Granulated sugar (for filling)
  • 0.25 cup All-purpose flour (for filling)
  • 4 large Eggs
  • 0.5 cup Lemon juice (freshly squeezed)
  • 1 tablespoon Lemon zest (optional)
  • 2 tablespoons Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

Step 2

In a large mixing bowl, cream together the softened butter and 0.5 cup of granulated sugar until smooth.

Step 3

Gradually add 2 cups of all-purpose flour to the butter mixture, blending until a crumbly dough forms. This will be the crust.

Step 4

Press the dough evenly into the bottom of the prepared baking pan to form a uniform layer.

Step 5

Bake the crust in the preheated oven for 15-20 minutes, or until the edges are lightly golden. Remove from the oven and set aside to cool slightly.

Step 6

While the crust is cooling, prepare the lemon filling. In a medium mixing bowl, whisk together 1.5 cups of granulated sugar and 0.25 cup of all-purpose flour until combined.

Step 7

Add the eggs, lemon juice, and optional lemon zest to the sugar-flour mixture. Whisk until the filling is smooth and well-mixed.

Step 8

Pour the lemon filling over the partially baked crust, spreading it out evenly.

Step 9

Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling sets and does not jiggle in the center when lightly shaken.

Step 10

Remove from the oven and allow the lemon squares to cool completely in the pan before slicing.

Step 11

Once cooled, dust the top with 2 tablespoons of powdered sugar for a finishing touch.

Step 12

Cut into 16 squares and serve. Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
