Ingredients

  • 6 pieces chicken thighs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 medium (sliced) yellow onion
  • 3 medium (diced) carrots
  • 1 cup chicken broth
  • 2 tablespoons (chopped) fresh parsley
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the chicken thighs dry with paper towels. Season both sides evenly with salt, black pepper, paprika, and garlic powder.

Step 3

Heat olive oil in a large, oven-safe skillet over medium-high heat.

Step 4

Place the chicken thighs skin side down in the skillet and sear for 4-5 minutes, until the skin is golden and crisp. Flip and sear the other side for an additional 3 minutes. Transfer the chicken to a plate and set aside.

Step 5

In the same skillet, add the sliced onion and diced carrots. Sauté for 4-5 minutes until softened.

Step 6

Melt the butter in the skillet with the vegetables, then sprinkle in the flour. Cook for 1 minute, stirring constantly to form a roux.

Step 7

Gradually pour in the chicken broth, whisking to avoid lumps. Let the sauce simmer for 2-3 minutes, allowing it to thicken.

Step 8

Return the seared chicken to the skillet, skin side up. Spoon some of the sauce and vegetables over the chicken.

Step 9

Transfer the skillet to the preheated oven and bake for 35 minutes, or until the chicken is fully cooked and registers an internal temperature of 165°F (74°C).

Step 10

Remove the skillet from the oven and let rest for 5 minutes. Garnish with chopped fresh parsley before serving.

Step 11

Serve warm with your favorite side dish, such as mashed potatoes or crusty bread.
