Ingredients

  • 0.5 cup popcorn kernels
  • 2 tablespoons neutral cooking oil (e.g., vegetable or canola)
  • 4 tablespoons unsalted butter
  • 0.25 cup honey
  • 0.25 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking soda

Directions

Step 1

Heat a large heavy-bottomed pot over medium heat. Add the cooking oil and 2-3 popcorn kernels. Cover with a lid and wait for the test kernels to pop, indicating the oil is hot enough.

Step 2

Once the test kernels pop, remove them from the pot and add the remaining popcorn kernels in an even layer. Cover with the lid, leaving it slightly ajar to allow steam to escape. Shake the pot occasionally to prevent burning.

Step 3

When popping slows to about 1 pop every 2-3 seconds, remove the pot from heat and immediately transfer the popped popcorn to a large bowl. Set aside.

Step 4

In a medium saucepan, melt the unsalted butter over medium heat. Stir in the honey, brown sugar, and salt. Continue stirring until the sugar has dissolved and the mixture is bubbling.

Step 5

Allow the mixture to bubble gently for 4-5 minutes, stirring occasionally. Remove from heat and immediately stir in the vanilla extract and baking soda. The mixture will foam slightly—this is normal.

Step 6

Pour the honey glaze over the popcorn, using a spatula to gently toss and coat the popcorn evenly.

Step 7

Spread the coated popcorn onto a large baking sheet lined with parchment paper. Use the spatula to spread it out evenly.

Step 8

Let the popcorn cool completely at room temperature for about 15-20 minutes. The glaze will harden as it cools.

Step 9

Once cooled, break apart any large clusters and transfer the honey popcorn to a serving bowl or airtight container. Enjoy!
