Ingredients

  • 4 pieces bone-in pork chops
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 0.5 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 0.5 cup heavy cream
  • 0.5 teaspoons thyme, dried
  • 0.5 teaspoons rosemary, dried
  • 2 tablespoons parsley, fresh, chopped

Directions

Step 1

Pat pork chops dry with a paper towel and season both sides evenly with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

Dredge the pork chops in the flour, shaking off any excess. Set aside.

Step 3

In a large skillet, heat olive oil and butter over medium-high heat until the butter is melted and sizzling.

Step 4

Sear the pork chops for 3-4 minutes per side, or until golden brown. Remove from the skillet and set aside on a plate.

Step 5

In the same skillet, lower the heat to medium and add the sliced onion. Sauté for about 5 minutes until softened and lightly caramelized.

Step 6

Add the minced garlic and cook for an additional 1 minute, until fragrant.

Step 7

Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet to deglaze the pan. Stir in the heavy cream, thyme, rosemary, and the remaining 0.5 teaspoon of salt.

Step 8

Return the pork chops to the skillet, nestling them into the sauce. Reduce the heat to low and cover the skillet with a lid.

Step 9

Simmer for 15-20 minutes, or until the pork chops are cooked through and tender (internal temperature should read 145°F/63°C).

Step 10

Garnish with fresh chopped parsley before serving.

Step 11

Serve hot with mashed potatoes, rice, or steamed vegetables for a complete meal.
