Ingredients

  • 500 grams Potatoes
  • 250 grams Green beans
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Ginger, minced
  • 1 teaspoon Garlic, minced
  • 1 unit Green chili, finely chopped
  • 1 teaspoon Salt
  • 2 tablespoons Fresh coriander leaves, chopped
  • 100 milliliters Water

Directions

Step 1

Wash, peel, and dice the potatoes into 1-inch cubes. Trim the ends of the green beans and cut them into 2-inch pieces.

Step 2

Heat the vegetable oil in a large pan or skillet over medium heat.

Step 3

Once the oil is hot, add the mustard seeds and cumin seeds. Allow them to sizzle and pop for about 30 seconds.

Step 4

Add the minced ginger, minced garlic, and chopped green chili to the pan. Sauté for 1-2 minutes until fragrant.

Step 5

Stir in the turmeric powder and red chili powder. Mix well to coat the spices in the oil.

Step 6

Add the diced potatoes and sauté for 3-4 minutes, ensuring they are well-coated with the spice mixture.

Step 7

Pour in the water and cover the pan with a lid. Let the potatoes cook for 10 minutes, stirring occasionally to prevent sticking.

Step 8

Add the green beans to the pan, along with salt. Stir to combine and cover again. Cook for another 10-12 minutes, or until the potatoes and beans are tender.

Step 9

Once the vegetables are cooked, remove the lid and increase the heat slightly to evaporate any excess liquid, allowing the dish to become dry.

Step 10

Taste and adjust seasoning if necessary. Garnish with freshly chopped coriander leaves.

Step 11

Serve warm as a side dish with rice, flatbreads, or your favorite curry.
