Ingredients

  • 2.5 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 2 teaspoons Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 1 cup Pumpkin puree (not pumpkin pie filling)
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Optional: chopped pecans or walnuts
  • 0.5 cup Optional: raisins or chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium-sized bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

Step 3

In a large bowl, use a hand mixer or stand mixer to cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.

Step 4

Mix in the pumpkin puree, egg, and vanilla extract. The mixture may look slightly curdled, but that’s okay.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing.

Step 6

If desired, fold in the chopped nuts, raisins, or chocolate chips to add extra texture and flavor.

Step 7

Using a tablespoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake the cookies in the preheated oven for 10-12 minutes, or until they are set and lightly golden around the edges.

Step 9

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Step 10

Store the cooled cookies in an airtight container at room temperature for up to 5 days. Enjoy with your favorite fall beverage!
