Ingredients

  • 2 cups Wheat bran
  • 1 cup Boiling water
  • 2 cups Buttermilk
  • 0.5 cups Vegetable oil
  • 0.75 cups Granulated sugar
  • 2 large Eggs
  • 2 cups All-purpose flour
  • 2 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 1 cup Raisins (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a standard 12-cup muffin tin with paper liners, or lightly grease the tin.

Step 2

In a large mixing bowl, combine the wheat bran and boiling water. Stir to moisten the bran, then let it sit for 10 minutes to cool slightly.

Step 3

In a separate bowl, whisk together the buttermilk, vegetable oil, sugar, and eggs until fully combined.

Step 4

Add the buttermilk mixture to the hydrated wheat bran and stir to combine.

Step 5

In another bowl, sift together the all-purpose flour, baking soda, and salt.

Step 6

Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix, as this can make the muffins dense.

Step 7

If desired, fold in the raisins gently to distribute evenly throughout the batter.

Step 8

Spoon the batter evenly into the prepared muffin cups, filling them about 3/4 full.

Step 9

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 10

Remove the muffins from the oven and allow them to cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 11

Serve warm or at room temperature. Store leftover muffins in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
