Ingredients

  • 250 grams pitted dates, chopped
  • 50 grams unsalted butter
  • 100 grams granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 120 grams crushed graham crackers
  • 50 grams chopped nuts (such as walnuts or pecans, optional)
  • 100 grams shredded coconut

Directions

Step 1

In a medium saucepan, combine the chopped dates, butter, and granulated sugar over medium heat. Stir continuously until the butter is melted and the sugar begins to dissolve.

Step 2

In a small bowl, whisk the egg. Reduce the heat to low and slowly add the egg to the saucepan, stirring constantly to avoid scrambling. Continue stirring until the mixture thickens, about 2-3 minutes.

Step 3

Remove the saucepan from heat and stir in the vanilla extract.

Step 4

Add the crushed graham crackers and chopped nuts (if using) to the saucepan. Mix well until everything is thoroughly combined.

Step 5

Allow the mixture to cool slightly, about 5 minutes, until it is comfortable to handle.

Step 6

Place the shredded coconut on a plate or shallow dish.

Step 7

Take small portions of the mixture (about 1 tablespoon each) and roll them into balls using your hands. Then roll each ball in the shredded coconut until fully coated.

Step 8

Place the coated date balls on a parchment-lined tray or plate. Once all balls are rolled and coated, refrigerate them for at least 30 minutes to set before serving.

Step 9

Store any leftovers in an airtight container in the refrigerator for up to one week.
