Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 0.5 teaspoon Salt
  • 0.75 cup Unsalted butter
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1 cup Buttermilk
  • 2 large Eggs
  • 1.5 teaspoons Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.5 cup Chopped pecans or walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, brown sugar, and salt.

Step 3

Cut in the unsalted butter using a pastry cutter or two knives until the mixture resembles coarse crumbs. Reserve 1/2 cup of this mixture for the topping and set aside.

Step 4

To the remaining mixture, add baking soda and baking powder, stirring until evenly distributed.

Step 5

In a separate bowl, whisk together the buttermilk, eggs, and vanilla extract until smooth.

Step 6

Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix.

Step 7

Pour the batter into the prepared baking pan and spread it out into an even layer.

Step 8

To the reserved topping mixture, add the ground cinnamon and chopped nuts (if using). Mix well and sprinkle this over the batter.

Step 9

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Allow the coffee cake to cool in the pan for about 15 minutes before slicing and serving. Enjoy warm or at room temperature!
