Rinse the yellow squash, green bell peppers, red bell peppers, and onions. Peel and finely dice or shred them, measuring the required quantities.
Place the shredded squash, diced bell peppers, and chopped onions in a large bowl. Sprinkle the salt over the vegetables and toss to combine.
Cover the bowl and let the mixture sit at room temperature for 1 hour to help draw out excess moisture from the vegetables.
After an hour, drain the liquid from the vegetable mixture and rinse under cold water to remove excess salt. Use a colander or a clean kitchen towel to squeeze out any remaining moisture from the vegetables.
