Ingredients

  • 4 pieces Bone-in pork chops
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 1 cup Unsalted chicken stock
  • 2 tablespoons Balsamic vinegar
  • 2 tablespoons Honey
  • 1.5 cups Frozen mixed berries
  • 2 teaspoons Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Season the pork chops on both sides with salt, black pepper, and garlic powder.

Step 2

Set your pressure cooker to the sauté setting and add the olive oil. Once hot, sear the pork chops for 2 minutes on each side until they are golden brown. Work in batches if necessary, then remove the pork chops and set them aside.

Step 3

Add the chicken stock to the pressure cooker and use a wooden spoon to deglaze the bottom by scraping up any browned bits. This will add flavor to the sauce.

Step 4

Stir in the balsamic vinegar, honey, and frozen mixed berries. Mix well to combine.

Step 5

Return the pork chops to the pressure cooker, nestling them into the berry mixture.

Step 6

Close the lid and set the pressure valve to sealing. Cook on high pressure for 8 minutes. Allow the pressure to release naturally for 5 minutes, then perform a quick release to release the remaining pressure.

Step 7

Carefully remove the pork chops and set them aside on a serving platter. Cover loosely with foil to keep warm.

Step 8

Set the pressure cooker back to the sauté setting. In a small bowl, mix the cornstarch with water to create a slurry. Stir the slurry into the berry sauce and cook for 1-2 minutes until the sauce thickens.

Step 9

Pour the thickened berry sauce over the pork chops and garnish with fresh parsley if desired. Serve immediately with your choice of sides such as mashed potatoes, rice, or roasted vegetables.
