Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter, cold and cubed
  • 0.75 cups milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 cups optional: raisins or currants

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a separate small bowl, whisk together the milk, egg, and vanilla extract. Reserve about 1 tablespoon of this mixture to use as an egg wash later.

Step 5

Gradually pour the wet ingredients into the dry ingredients, stirring gently with a wooden spoon or spatula until the dough begins to come together. Be careful not to overmix.

Step 6

If you'd like to add raisins or currants, fold them into the dough now.

Step 7

Turn the dough out onto a lightly floured surface and knead gently 2–3 times until it comes together. Pat or roll the dough to about 1-inch thickness.

Step 8

Using a floured biscuit cutter or the rim of a glass, cut out round scones and transfer them to the prepared baking sheet. Gather any scraps, re-roll, and cut out more scones until all the dough is used.

Step 9

Brush the tops of the scones with the reserved egg wash to give them a golden finish.

Step 10

Bake in the preheated oven for 10–12 minutes, or until the scones are risen and golden on top.

Step 11

Allow the scones to cool slightly on a wire rack before serving. Enjoy warm with butter, clotted cream, or jam.
