Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 large carrots, peeled and diced
  • 2 medium celery stalks, diced
  • 14.5 ounces canned diced tomatoes
  • 6 cups chicken or vegetable broth
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 cups fresh spinach, roughly chopped
  • 9 ounces refrigerated cheese tortellini
  • 0.5 cup Parmesan cheese, grated (for serving)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the diced onion, garlic, carrots, and celery. Sauté for 5–7 minutes, stirring occasionally, until the vegetables are soft and the onion is translucent.

Step 3

Stir in the canned diced tomatoes (with their juices), chicken or vegetable broth, Italian seasoning, salt, and black pepper.

Step 4

Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cover the pot and let it simmer for 15 minutes to allow the flavors to meld.

Step 5

Add the chopped fresh spinach and refrigerated cheese tortellini to the pot. Simmer for another 5–7 minutes, or until the tortellini are tender and cooked through.

Step 6

Taste the soup and adjust the seasoning with additional salt and pepper, if needed.

Step 7

Serve hot with a sprinkle of grated Parmesan cheese and, if desired, a garnish of freshly chopped parsley.
