Rinse the pinto beans thoroughly under cold running water and remove any debris or cracked beans.
Place the beans in a large bowl and cover them with water. Soak overnight or for at least 8 hours. Drain and rinse before cooking.
In a large pot or Dutch oven, cook the bacon slices over medium heat until crispy. Remove the bacon and set it aside but leave the rendered fat in the pot.
Add the chopped onion to the pot with the bacon fat and sauté for 3-4 minutes, or until softened and translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.
Add the soaked and drained beans to the pot, followed by 8 cups of water. Stir in salt, black pepper, cumin, and paprika. Bring to a boil over high heat.
Reduce the heat to low, cover the pot with a lid, and let the beans simmer for 2 hours, stirring occasionally.
After 2 hours, stir in the diced tomatoes and continue cooking uncovered for another 30-45 minutes, or until the beans are tender and the liquid has thickened to your desired consistency.
Taste and adjust seasoning if needed. Chop the cooked bacon into small pieces and stir it back into the pot.
Serve the pinto beans hot, garnished with chopped cilantro if desired. They pair well with cornbread or steamed rice.
