Ingredients

  • 2 cups pinto beans
  • 8 cups water
  • 4 slices bacon
  • 1 medium, finely chopped yellow onion
  • 3 cloves, minced garlic
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 cup diced canned tomatoes
  • 2 tablespoons, chopped (optional) fresh cilantro

Directions

Step 1

Rinse the pinto beans thoroughly under cold running water and remove any debris or cracked beans.

Step 2

Place the beans in a large bowl and cover them with water. Soak overnight or for at least 8 hours. Drain and rinse before cooking.

Step 3

In a large pot or Dutch oven, cook the bacon slices over medium heat until crispy. Remove the bacon and set it aside but leave the rendered fat in the pot.

Add the chopped onion to the pot with the bacon fat and sauté for 3-4 minutes, or until softened and translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.
