Ingredients

  • 2 pounds ground beef (80% lean)
  • 1 cup breadcrumbs
  • 0.5 cup milk
  • 2 large eggs
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon Worcestershire sauce
  • 0.25 cup ketchup
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried parsley
  • 0.5 teaspoon paprika
  • 2 tablespoons brown sugar
  • 0.25 cup ketchup (for glaze)
  • 1 teaspoon yellow mustard

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper for easy removal.

Step 2

In a large mixing bowl, combine the breadcrumbs and milk. Let this mixture sit for 2-3 minutes to allow the breadcrumbs to absorb the moisture.

Step 3

Add the ground beef, eggs, chopped onion, minced garlic, Worcestershire sauce, ketchup, salt, pepper, parsley, and paprika to the bowl. Mix gently with your hands or a wooden spoon until just combined. Avoid overmixing to prevent a dense meatloaf.

Step 4

Shape the meat mixture into a loaf shape and place it in the prepared pan.

Step 5

In a small bowl, whisk together the brown sugar, ketchup, and mustard to make the glaze. Spread half of the glaze evenly over the top of the meatloaf.

Step 6

Place the meatloaf in the oven and bake for 45 minutes. Remove it from the oven and spread the remaining glaze on top.

Step 7

Return the meatloaf to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).

Step 8

Let the meatloaf rest in the pan for 10 minutes before slicing. Serve warm with mashed potatoes or vegetables for a complete meal.
