Ingredients

  • 1 medium head Green cabbage
  • 2 medium Carrots
  • 1 cup Mayonnaise
  • 1 cup Sweet pickle relish
  • 2 tablespoons White vinegar
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Remove any damaged outer leaves from the cabbage. Cut the cabbage into quarters, remove the core, and finely shred it. Place the shredded cabbage in a large mixing bowl.

Step 2

Peel and grate the carrots using a box grater or food processor. Add the grated carrots to the bowl with the shredded cabbage.

Step 3

In a separate smaller bowl, prepare the dressing by combining mayonnaise, sweet pickle relish, white vinegar, sugar, salt, and black pepper. Mix thoroughly until the dressing is smooth and well-blended.

Step 4

Pour the dressing over the cabbage and carrot mixture. Using a pair of tongs or a large spoon, toss the ingredients together until all the vegetables are evenly coated with the dressing.

Step 5

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld. For best results, refrigerate the coleslaw for 2-3 hours.

Step 6

Before serving, give the coleslaw a final toss to redistribute the dressing. Serve chilled as a side dish or as a topping for sandwiches or burgers.
