Ingredients

  • 1 kg Chicken (bone-in or boneless, cut into pieces)
  • 3 medium Onions (finely chopped)
  • 2 large Tomatoes (pureed)
  • 2 tablespoons Ginger-garlic paste
  • 3 pieces Green chilies (slit lengthwise)
  • 1 teaspoon Turmeric powder
  • 2 teaspoons Coriander powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Garam masala powder
  • 1.5 teaspoons Red chili powder (adjust to taste)
  • 0.25 cup Fresh coriander leaves (chopped)
  • 3 tablespoons Cooking oil (vegetable or mustard oil)
  • 1 to taste Salt
  • 2 pieces Bay leaves
  • 1 small Cinnamon stick
  • 4 pieces Cloves
  • 3 pieces Cardamom pods
  • 1 cup Water

Directions

Step 1

Wash the chicken thoroughly and set aside to drain the excess water.

Step 2

Heat oil in a large, heavy-bottomed pan over medium heat. Add bay leaves, cinnamon stick, cloves, and cardamom pods. Sauté for 30 seconds until aromatic.

Step 3

Add the chopped onions and cook until golden brown, stirring frequently to prevent burning (about 7-8 minutes).

Step 4

Stir in the ginger-garlic paste and slit green chilies. Cook for 1-2 minutes until the raw smell of garlic disappears.

Step 5

Add turmeric powder, coriander powder, cumin powder, and red chili powder. Mix well and cook for another minute to toast the spices.

Pour in the pureed tomatoes and cook until the mixture thickens and oil separates from the masala (5-7 minutes).

Add the chicken pieces to the pan and stir well to coat them with the spice mixture. Cook for 5-7 minutes until the chicken begins to brown slightly.

Season with salt and pour in 1 cup of water. Mix thoroughly, cover the pan, and let the curry simmer on low-medium heat for 20-25 minutes or until the chicken is fully cooked and tender.

Sprinkle garam masala powder and stir to incorporate. Let the curry simmer for an additional 2-3 minutes.

Garnish with fresh coriander leaves and serve hot with steamed rice, naan, or roti.
