Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 0.5 cups all-purpose flour
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cups chicken stock
  • 0.25 cups fresh lemon juice
  • 1 teaspoons lemon zest
  • 2 tablespoons honey
  • 1 teaspoons cornstarch
  • 1 tablespoons water
  • 2 tablespoons fresh parsley, chopped
  • 1 whole lemon slices (for garnish)

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap and gently pound to an even thickness, about 1/2 inch thick.

Step 2

In a shallow bowl, mix the flour, salt, and black pepper. Dredge each chicken breast in the flour mixture, shaking off the excess.

Step 3

Heat olive oil and butter in a large skillet over medium heat. Once hot, add the chicken breasts and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, lower the heat to medium and add the minced garlic. Sauté for 1 minute until fragrant, being careful not to burn it.

Step 5

Pour the chicken stock into the skillet to deglaze, scraping up any browned bits. Add the lemon juice, lemon zest, and honey. Stir and bring the mixture to a gentle simmer.

Step 6

In a small bowl, whisk together the cornstarch and water to create a slurry. Slowly pour the slurry into the skillet, stirring constantly, until the sauce thickens, about 2 minutes.

Step 7

Return the chicken breasts to the skillet and spoon the lemon sauce over them. Simmer for 2-3 minutes to heat through and allow the chicken to absorb the flavors.

Step 8

Garnish with freshly chopped parsley and lemon slices before serving.

Step 9

Serve warm with rice, pasta, or a fresh green salad on the side.
