Ingredients

  • 4 cups Cooked and cooled white rice
  • 2 tablespoons Vegetable oil or sesame oil
  • 2 pieces Large eggs
  • 3 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 cup Frozen peas and carrots
  • 1 cup Cooked chicken breast or shrimp (optional)
  • 2 stalks Green onions, thinly sliced
  • 2 cloves Garlic, minced
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Heat 1 tablespoon of vegetable oil or sesame oil in a large non-stick skillet or wok over medium heat.

Step 2

In a small bowl, beat the eggs with a pinch of salt. Pour the eggs into the skillet and scramble until cooked through. Remove the eggs and set aside.

Step 3

Add another tablespoon of oil to the skillet. Toss in the minced garlic and cook until fragrant, about 30 seconds.

Step 4

Add the frozen peas and carrots to the skillet. Stir-fry for 2-3 minutes or until they are heated through.

If using cooked chicken or shrimp, add it to the skillet and mix well with the vegetables.
