Ingredients

  • 300 grams Chinese egg noodles (or spaghetti)
  • 1 large Carrot, julienned
  • 1 medium Cucumber, julienned
  • 1 medium Red bell pepper, thinly sliced
  • 3 stalks Green onions, thinly sliced
  • 0.5 cup Fresh cilantro leaves, chopped
  • 3 tablespoons Soy sauce
  • 2 tablespoons Rice vinegar
  • 2 tablespoons Sesame oil
  • 1 tablespoon Honey
  • 1 teaspoon Fresh ginger, grated
  • 1 clove Garlic, minced
  • 1 tablespoon Sesame seeds, toasted
  • 2 tablespoons Crushed peanuts (optional)

Directions

Step 1

Bring a large pot of water to a boil and cook the Chinese egg noodles according to the package instructions until al dente. Drain and rinse the noodles under cold water to stop the cooking process. Set aside to cool.

Step 2

Prepare the vegetables by julienning the carrot and cucumber, thinly slicing the red bell pepper, and chopping the green onions and cilantro. Place all vegetables in a large mixing bowl.

Step 3

In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic to create the dressing.

Step 4

Add the cooled noodles to the bowl with the vegetables. Pour the dressing over the mixture and toss everything together until well coated.

Step 5

Sprinkle the toasted sesame seeds and crushed peanuts (if using) over the top for added texture and flavor.

Step 6

Chill the salad in the refrigerator for at least 15 minutes to allow the flavors to meld. Serve cold and enjoy!
