Ingredients

  • 1 pound ground beef
  • 2 cups canned kidney beans (drained and rinsed)
  • 1 cup canned black beans (drained and rinsed)
  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 2 cups crushed canned tomatoes
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon sugar
  • 2 tablespoons fresh parsley (chopped)

Directions

Step 1

Heat the olive oil in a large skillet or pot over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Push the onions and garlic to the side of the skillet and add the ground beef. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

Step 5

Once the beef is cooked, stir in the chili powder, cumin, paprika, salt, black pepper, and sugar. Mix well to coat the beef in the spices.

Step 6

Add the tomato paste and stir to combine evenly with the beef mixture.

Step 7

Pour in the crushed tomatoes and beef broth. Stir thoroughly and bring the mixture to a simmer.

Step 8

Add the kidney beans and black beans to the pot, stirring to distribute them evenly.

Step 9

Reduce the heat to low, cover the pot with a lid, and let the mixture simmer gently for 20-25 minutes, stirring occasionally.

Step 10

Taste and adjust seasonings as needed. If desired, add a bit more salt, pepper, or chili powder for extra flavor.

Step 11

Once the mixture is thickened and flavors are well developed, turn off the heat.

Step 12

Garnish with fresh chopped parsley and serve warm. Enjoy!
