Ingredients

  • 2 pounds asparagus spears
  • 2 cups cheddar cheese
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 0.5 cup milk
  • 2 tablespoons butter
  • 1 small, diced onion
  • 2 minced garlic cloves
  • 1 cup breadcrumbs
  • 0.5 cup parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon paprika

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash and trim the asparagus spears by snapping off the woody ends. Steam for 5-7 minutes until tender but still bright green. Drain and set aside.

Step 3

In a medium skillet, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another 30 seconds.

Step 4

In a large mixing bowl, combine the cream of mushroom soup, sour cream, milk, sautéed onion and garlic mixture, salt, and black pepper. Fold in 1 cup of the cheddar cheese.

Step 5

In a greased 9x13-inch casserole dish, arrange the steamed asparagus spears in an even layer.

Step 6

Pour the soup and cheese mixture evenly over the asparagus. Sprinkle the remaining 1 cup of cheddar cheese on top.

Step 7

In a small bowl, mix together the breadcrumbs, parmesan cheese, and paprika.

Step 8

Sprinkle the breadcrumb mixture over the casserole as the final topping.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.

Step 10

Remove from the oven and let it rest for 5 minutes before serving. Enjoy Mrs. Bice’s Asparagus Casserole hot!
