Ingredients

  • 250 grams dates, pitted and chopped
  • 240 milliliters boiling water
  • 1 teaspoon baking soda
  • 60 grams butter
  • 150 grams granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoons salt
  • 50 grams walnuts, chopped (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease or line a standard loaf pan with parchment paper.

Step 2

Place the chopped dates in a medium bowl and pour the boiling water over them. Stir in the baking soda and set aside to cool for about 10 minutes.

Step 3

In a large mixing bowl, cream together the butter and sugar until light and fluffy.

Add the egg and vanilla extract to the butter mixture, beating well to combine.

In a separate bowl, sift together the flour, baking powder, and salt.
