Ingredients

  • 2 cups dried butter beans
  • 6 cups water
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 medium onion, diced
  • 4 cloves garlic cloves, minced
  • 14 ounces diced tomatoes (canned)
  • 2 cups vegetable broth
  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 piece bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse the butter beans under cold water and place them in a large bowl. Cover with water and soak overnight, or for at least 8 hours. Drain and set aside.

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes, or until translucent.
