Ingredients

  • 6 tablespoons Korean chili flakes (gochugaru)
  • 4 tablespoons Fish sauce
  • 2 tablespoons Soy sauce
  • 6 Garlic cloves, minced
  • 1 tablespoon Ginger, grated
  • 2 tablespoons Korean fermented salted shrimp (saeujeot), minced
  • 1 tablespoon Granulated sugar
  • 2 tablespoons Rice vinegar
  • 1 cup Water
  • 2 tablespoons Sweet rice flour (glutinous rice flour)

Directions

Step 1

In a small saucepan, combine 1 cup of water and 2 tablespoons of sweet rice flour. Whisk together until smooth.

Step 2

Heat the saucepan over medium heat and bring the mixture to a gentle simmer, stirring constantly. Cook for about 2-3 minutes until the mixture thickens to a paste-like consistency. Remove from heat and let cool to room temperature.

Step 3

In a mixing bowl, combine the cooled rice paste with Korean chili flakes (gochugaru), fish sauce, soy sauce, minced garlic, grated ginger, fermented salted shrimp, granulated sugar, and rice vinegar.

Step 4

Mix thoroughly until all ingredients are well incorporated into a thick, vibrant red paste. Adjust the seasoning to taste if needed, balancing sweetness, saltiness, and spiciness.

Step 5

Transfer the kimchee base to an airtight container and store in the refrigerator for up to 1 week. Use as a base for making kimchee or as a flavorful addition to other dishes.
