Ingredients

  • 6 whole Roma tomatoes
  • 2 whole Jalapeño peppers
  • 1 small Red onion
  • 2 whole Garlic cloves
  • 0.5 cups Cilantro
  • 1 whole Lime
  • 1 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 0.5 teaspoons Cumin powder
  • 1 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the Roma tomatoes and jalapeños in half lengthwise. Arrange them cut-side down on a baking sheet along with the garlic cloves (unpeeled).

Step 3

Drizzle the olive oil over the vegetables and roast in the preheated oven for 10 minutes, or until the tomato skins are slightly charred and the garlic is fragrant.

Step 4

Remove the vegetables from the oven and allow them to cool slightly. Peel the garlic cloves and transfer them along with the tomatoes and jalapeños to a blender or food processor.

Step 5

Peel and roughly chop the red onion. Add it to the blender, along with the cilantro leaves, juice of the lime, salt, black pepper, and cumin powder.

Step 6

Pulse the blender several times to achieve the desired texture. For a chunky salsa, blend lightly; for a smoother salsa, blend more thoroughly.

Step 7

Taste and adjust the seasoning if necessary by adding additional salt or lime juice.

Transfer the salsa to a serving bowl or an airtight container. Chill in the refrigerator for at least 30 minutes for the flavors to meld together.
