  • 1 cup beef broth
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoons cayenne pepper
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 piece bay leaf
  • 0.25 cup fresh cilantro, chopped (optional garnish)
  • 0.5 cup shredded cheddar cheese (optional topping)
  • 0.5 cup sour cream (optional topping)

Directions

Step 1

Heat a large skillet over medium-high heat. Add the olive oil, then brown the ground beef, breaking it into small pieces as it cooks, about 5-7 minutes. Once cooked, drain excess fat and transfer the beef to a slow cooker.

Step 2

In the same skillet, sauté the diced onion and green bell pepper until softened, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant. Transfer the vegetables to the slow cooker.
